  • 👃 Nose: Tropical fruits meet grassy, herbal notes – invitingly fresh and balanced, typical of Sauvignon Blanc from warmer climes.
  • 👅 Palate: Fruity and light-footed with lively acidity, a silky texture and medium body; a well-balanced, juicy finish of medium length.
  • 🎭 Character: A drinking wine in the best sense – relaxed and uncomplicated, yet with its own distinct profile and a pleasant grip on the palate.
  • 🍽️ Food pairing: An ideal partner for goat’s cheese, herb-roasted poultry or fresh vegetable dishes from the summer menu.

Wine description for Habla de Ti… 2023 by Habla

Colour & appearance
Greenish-yellow with a bright, clear sheen – a glass that visually heralds freshness from the outset.
Nose
A clean, inviting aromatic profile: tropical fruits meet grassy, vegetal notes – entirely typical of Sauvignon Blanc from a warmer region, yet without sacrificing elegance. Fresh, lively and harmonious.
Palate
A drinking wine in the best sense: uncomplicated yet far from banal. The fruit from the nose carries through, joined by vibrant acidity and a silky texture – lees ageing quietly does its work here. Medium-bodied with noticeable grip, all at just 12.5% alcohol – a wine that whets the appetite rather than overwhelms.
Finish
Juicy, well-balanced and of medium length – without heaviness, leaving a pleasant aftertaste.
Terroir & origin
The vines are rooted at around 450 metres above sea level near Trujillo in the heart of Extremadura, where Francisco Pizarro once set out for Peru. The poor slate soils, dry, hot summer days and cool nights create a remarkable tension: despite the harsh climate – “Extremadura” literally means “extremely hard” – the result is a white wine of astonishing freshness.
Grape variety & vinification
A single-varietal Sauvignon Blanc from 25-year-old vines. Aged in stainless steel tanks with several months on the fine lees – a process that preserves the fruit and lends the wine its silky richness.
Food pairings
An ideal partner for grilled fish, seafood, goat’s cheese, asparagus dishes, or simply enjoyed with a cool glass alongside some evening tapas.
Special features
Founded in 1999 by Juan Tirado and José Civantos, Bodegas Habla was instrumental in putting Extremadura firmly on Spain’s wine map. The semi-underground winery, winner of the Extremadura Architecture Award, operates using gravity flow in the Roman tradition. Habla de Ti belongs to the estate’s accessible entry-level range – yet clearly bears the hallmark of a house that treats every vintage as a distinct creation.
