Colour & Appearance
Luminous lemon yellow with golden and green reflections. The perlage is fine and active, the mousse elegant, though not of excessive persistence – a sign of natural vinification without dosage.
Nose
The 78 months on lees have transformed this Blanc de Noirs: mirabelle plums and peach on warm cake base, hints of Tarte Tatin, alongside tropical notes of pineapple and mango. The autolysis aromas reveal themselves in warm brioche with salted butter. Yet Loimer masterfully balances this opulence with freshness: lime and lemon zest, maritime oyster shell, wet chalk and mineral stone provide tension and depth.
Palate
Multifaceted and complex on the attack. The warm fruit merges with the creamy yeast autolysis, which lingers on the palate for minutes. Behind this builds a cool, mineral elegance – crisp and precise. Not opulent, but characterised by subtle complexity. Almond and hazelnut in the finish underscore the maturity.
