Wine Description for Côtes du Jura Cuvée Tradition Vin de Voile 2021 from Domaine Grand

Colour & Appearance
Luminous golden yellow in the glass – the colour already reveals the distinctive vinification under flor yeast.
Nose
A fascinating interplay of aromas between oxidation and freshness: walnuts and dried figs meet salted lemons and salted almonds. These are joined by yellow plums, green apples, lemon zest and delicate hints of nougat and marzipan. The oxidative notes remain remarkably subtle – an elegant Vin de Voile that demonstrates restraint.
Palate
Here the artistry of the cuvée reveals itself: the roundness of Savagnin harmonises perfectly with the freshness of Chardonnay. The wine balances masterfully between juiciness and gentle acidity. Fine tannins structure the body, whilst citrus fruits and green apple provide vibrancy. Fascinating nuances of curry leaves, salted almonds and subtle wood notes with roasted notes and caramel lend complexity. A lively bitterness and abundant umami make this wine particularly intriguing – power meets elegance.
Grape Variety & Vinification
A classic Jura cuvée made from approximately two-thirds Chardonnay and one-third Savagnin, traditionally fermented together in barrel. As a Vin de Voile, the wine matures without complete topping up, allowing a light flor layer to form sporadically – considerably more subtle than in pure Savagnin wines. This technique gives the wine its characteristic complexity without sacrificing freshness.
Food Pairing Suggestions
A versatile companion for demanding dishes: Perfect with Comté or other aged cheeses, pan-fried turbot, calf’s sweetbreads, morels in cream sauce, Coq au Vin Jaune or truffle risotto. The umami component also makes it an ideal partner for Asian cuisine with soy sauce and fermented ingredients.
Special Characteristics
An exemplary Jura wine that demonstrates that Vin de Voile need not necessarily be extremely oxidative. The Cuvée Tradition from Domaine Grand proves its finesse: subtle oxidation meets lively freshness – a wine with soul and character at a fair price.
