Colour & Appearance
Cloudy sour cherry red – vibrant, unfiltered, honest. The glass reveals instantly: nothing has been hidden here.
Nose
An almost exuberant nose that truly lives up to its name. Sour cherry and red berries dance with rose petals and elderberry, backed by the garrigue-typical spice of the Roussillon: rosemary, thyme, white pepper, aniseed. A delicate touch of umami – almost like a reduced meat broth – lends the nose surprising depth and complexity.
Palate
Fresh, floral, feather-light. With just 11% alcohol, this wine glides effortlessly across the palate – invigorating, juicy, with an enchanting floral fragrance that lingers long. Not a single gram of excess, just pure drinking pleasure.
Finish
Crisp and fresh, with a pleasant echo of red fruits and herbal spice. Short to medium length – but so inviting that you immediately reach for the next sip.
Terroir & Origin
Tom Lubbe farms his estate Matassa in the wild, sun-drenched hills of the Roussillon according to biodynamic principles. The barren schist and gneiss soils, the Tramontane wind and the Mediterranean heat shape an unmistakable character – and yet Lubbe achieves an astonishing elegance and coolness here.
Grape Variety & Vinification
Single-varietal Cinsault, vinified as a natural wine without frills and without compromise. Minimal intervention in the cellar, no filtration – the wine presents itself exactly as it is: living, unadorned, authentic.
Food Pairings
Ideal with uncomplicated cuisinegrilled vegetables, charcuterie, pissaladière or a simple tomato and herb salad. Equally seductive on its own, best served slightly chilled.
