Colour & Appearance

A hazy sour cherry red, appearing matte and vibrant in the glass – no transparency, just fresh vitality.

Nose

It dances. Sour cherries, red berries and rosemary leap spontaneously from the glass, followed by thyme, rose petals and elderflower. Add a touch of white pepper and aniseed, underpinned by an unmistakable umami note – savoury, like meat broth. The nose is deliberately untamed.

Palate

Fresh, floral-scented and delightfully invigorating. With only 11.0% ABV, its lightness shines – this is the interplay of high-altitude garrigue sites and early harvesting by Tom Lubbe. Sour cherry dominates, wild herbs tickle the palate, and the acidity cuts down to the bedrock. No muscle, only nerve.

Finish

Short, precise, hip. A pervasive freshness that never stops dancing.

Terroir & Origin

From Roussillon, where some producers preach power, Tom Lubbe opts for freshness. His plots lie in high-altitude garrigue amongst cedars, fig trees and wild rosemary – often on schist and marl. Vines here, up to 120 years old (from the 1900s), lend a minerality to the glass that cannot be manufactured.

Grape Variety & Vinification

Cinsault. To be precise: 100% of this variety, cultivated by Tom Lubbe, the New Zealander who trained with Gérard Gauby and perfected the path of spontaneous fermentation and sulphur avoidance. Spontaneous fermentation, no added sulphur (since 2015), unfiltered – and with red grapes often whole-bunch infusion, purely executed here. The early harvest and the avoidance of extraction-driven colour give this Cinsault its dancer’s signature.

Food Pairings

Kalamata olives or grilled mushrooms with a crisp salad? Both suit this freshness. A Catalan tapas spread – sardines, ham, tomato – also matches its playful temperament. Just nothing too heavy; the joy wants to remain free.
