Colour & Appearance

Hazy sour cherry red, unfined and vibrant — a wine that makes no secret of its origins.

Nose

Sour cherries and red berries leap from the glass, accompanied by rosemary, thyme, rose petals and elderflower. Behind them: white pepper, aniseed and a hint of umami reminiscent of a savoury meat broth.

Palate

Fresh, floral and invigorating. The 11.0% alcohol lend the wine a dancing lightness that feels almost rebellious in the Roussillon — a region otherwise known for power. Juicy and approachable, yet far from simple.

Finish

Herbaceous and cherry-fruited, with a lingering note evoking wild rosemary after the rain.

Terroir & Origin

The vines grow on schist and marl in the hills around Calce, partly at altitudes of 500 to 600 metres, surrounded by Mediterranean maquis, cedar trees and wild rosemary. Tom Lubbe cultivates 20 hectares of ancient vines — some over 100 years old. The Ecocert certification merely confirms what has long been standard practice: no chemicals, just cover crops and manual labour.

Grape Variety & Vinification

100% Cinsault, harvested early — in the Roussillon, picking sometimes begins as early as the start of August. Since 2015, not a drop of sulphur has been used in the cellar. Spontaneously fermented, unfiltered and unfined. The result: a wine that chooses freshness over weight.

Food Pairings

Grilled sardines with lemon and herbs, charcuterie with cornichons, pizza topped with fennel salami, or simply toasted bread with olive oil and tomatoes. Equally delightful on its own.
