Wine Description for Blanc de Noirs Grand Cru Limited Edition by De Sousa

Colour & Appearance
Vibrant straw yellow with impressive depth. The perlage rises persistently and delicately – a visual promise that this Champagne delivers on the palate.
Nose
Here unfolds the full nobility of Pinot Noir from Ambonnay. Rather than clumsy yeast notes, an elegant complexity emerges: fine bread crust, citrus oils and citrus blossom, alongside roasted hazelnuts and a seductive note of salted butter, darkly toasted toast with paper-thin lardo. The autolysis remains discreet in the background – this is no aperitif Champagne, but demands a large glass and a properly laid table.
Palate
Vinous on the attack, with a fine perlage that transports the aromatics with precision. Roasted nuts and an extract-rich red berry fruit dominate the opening, accompanied by butter and toast notes. The texture is what makes this special: a gripping, almost powdery-fine phenolic character lends the wine, together with the mousse, a razor-sharp definition. The chalky impression on the palate underscores its Grand Cru provenance.
Finish
Long, precise and with a saline minerality that invites the next sip. The phenolics remain present without ever dominating.

100% Grand Cru Pinot Noir from Ambonnay, one of Champagne’s most prestigious vineyard sites. The chalky soils impart the wine’s characteristic minerality and tension.
Grape Variety & Vinification
Ten months ageing of the base wines in wooden cask, then bottled unfiltered – on 17 July 2019. After nearly four years on the lees, the Champagne was disgorged on 14 March 2023. Zero grams dosage – a Brut Nature that reveals its terroir and vinification without cosmetic intervention.
Food Pairing Recommendations
Muhammara with roasted pointed peppers and walnuts, pan-fried trout fillets with hazelnut-parsley pesto or young pork loin under a nut crust. This Champagne demands substance on the plate.
