Wine Description for Blanc de Noirs Grand Cru Limited Edition by De Sousa

Colour & Appearance
Vibrant, luminous straw yellow with a fine, persistent mousse – a Champagne that already displays character in the glass.
Nose
The nose is of striking integrity: fine brioche crust, citrus oils and hazelnut interweave with the aroma of salted butter, darkly toasted toast and a hint of lardo. The autolysis remains discreet in the background – no bakery exuberance, but noble restraint. The Pinot Noir carries its provenance from the Grand Cru sites of Ambonnay with quiet conviction.
Palate
The attack is vinous and substantial. Roasted nuts and an extract-rich red berry fruit open the play, accompanied by notes of butter and toast. The texture is gripping, with a chalky-mineral impression reminiscent of Champagne’s chalk soils. An almost powdery fine phenolic character lends the wine contour and depth – beyond the mere sparkling wine experience.
Finish
Long, precise and saline-mineral. The wine bids farewell with dignity – neither too much nor too little. Dosage zéro at its best.
Terroir & Origin
100 % Grand Cru grapes from Ambonnay, one of Champagne’s most renowned Pinot Noir villages. The chalk soils impart the wine with that characteristic saline minerality that distinguishes every great Champagne.
Grape Variety & Vinification
Pure Pinot Noir. The base wines matured 10 months in wooden cask before the wine was transferred unfiltered to bottle fermentation. Disgorged on 14 March 2023, bottled without dosage – a consistently artisanal approach that gives terroir the final word.
Food Pairing Recommendations
A Champagne for the formal table, not for the aperitif round. Ideal with pan-fried trout fillets with parsley, hazelnut and lemon zest pesto, with young pork loin under a nut crust with lemon-parsley purée or with the spicy-nutty muhammara made from roasted pointed peppers and walnuts.
