Wine description for Bourgogne Côte d’Or “La Monatine” AOC 2023 by Rougeot Père & Fils
- Character
- A Chardonnay of crystalline clarity and pulsating energy. The reduction is masterfully balanced; the wine presents itself as puristic, free from masking oak makeup, with a salty depth and a captivating freshness on the palate.
- Terroir & Origin
- The Bourgogne Côte d’Or appellation represents elevated regional quality from the heartlands of the Côte de Beaune. Since Pierre-Henri Rougeot radically changed the domain’s course in 2016 and ended the focus on mass production, the wines reflect the unvarnished truth of their soils. The vineyards around Meursault endow the wine with remarkable mineral tension.
- Grape Variety & Vinification
- This single-varietal Chardonnay stems from the house’s nature-driven philosophy. Pierre-Henri relies on biodynamic farming (certified organic since 2020) and minimal intervention. In the historic 18th-century cellars, he completely dispenses with added sulphur during ageing in traditional Burgundy barrels, as well as with lees stirring (batonnage). The wine is neither filtered nor fined, bestowing it with unadulterated transparency.
- Food Pairings
- Pairs brilliantly with pan-fried turbot in lemon butter, scallops, or refined poultry breast in a morel cream sauce.
