Tasting note
Colour & appearance
Intense straw yellow, animated by a fine, lively mousse that forms a delicate, persistent bead in the glass.
Nose
Clean and fresh, with the classic profile of a Blanc de Blancs: green and yellow apples, pears and lemon, alongside ginger and a hint of lemon curd. Underpinned by subtle patisserie notes and a delicate yeastiness reminiscent of freshly baked bread.
Palate
Juicy and energetic, with noticeable acidity that gives the wine a taut, focused feel. The texture is at once creamy and mineral, the bead fine yet assertive. A sparkling wine of crystalline clarity that never feels heavy despite its structure.
Finish
Precise and mouth-watering, with lingering freshness and a saline aftertaste that remains long on the palate.
Terroir & origin
The grapes come from the estate’s higher-altitude, cooler vineyard sites in Oestrich-Winkel. Here, in the heart of the Rheingau, slate and quartzite dominate the soils, lending the wines their distinctive minerality and structure.
Grape varieties & vinification
A cuvée of Riesling, Weißburgunder and Auxerrois. Following spontaneous fermentation of the base wine, the traditional method is employed with 24 months on the lees. As a Brut Nature, this sparkling wine receives no dosage – pure and unadulterated.
Food pairings
A versatile companion to oysters, ceviche or pan-fried sole. Equally convincing with smoked salmon, goat’s cheese or as an aperitif alongside dainty canapés.
Special features
This sparkling wine demonstrates that the Rheingau has more to offer than still wine alone. The combination of biodynamic viticulture (Demeter-certified since 2009), cool site selection and gentle vinification yields a sparkling wine of rare precision and drinkability.
