Character
A vibrant, unsulphited Pét-Nat from the Catalan Xarel·lo grape, which embodies refreshing lightness with its moderate alcohol content of 10.5% vol. Alta Alella interprets the traditional Cava variety here in a radically new way: natural, spontaneously fermented and fermented in the bottle using the Méthode Ancestrale. The result is an uncomplicated, highly drinkable sparkling wine with fine perlage and pronounced drinking appeal – a contemporary answer to industrial Cava production.
Terroir & Origin
Alta Alella manages its vineyards in the coastal hills north-east of Barcelona, where Mediterranean breezes and proximity to the sea provide cooling influences. The D.O. Cava region encompasses various areas of Catalonia, yet Alta Alella has deliberately chosen its own path: organic cultivation on granitic soils at higher elevations that give Xarel·lo its characteristic freshness and minerality. The maritime climate preserves the natural acidity of the grapes – essential for vibrant natural sparkling wines.
Grape Variety & Vinification
Xarel·lo is the backbone of traditional Cava, yet here it shows its wildest side. The grapes are harvested early to preserve the crisp acidity structure. Spontaneous fermentation with natural yeasts and the deliberate avoidance of sulphur require precise artisanal skill. In the Pét-Nat method, the wine is bottled before the completion of the first fermentation, where it develops its natural carbonation – without dosage, without disgorging. The result is authentic, vibrant and slightly variable with each vintage – exactly as natural wine should be.
Food Pairing Suggestions
This uncomplicated Pét-Nat pairs excellently with oysters, seafood and boquerones. It is also an ideal companion to fried fish, tapas and Manchego. The moderate sweetness and low alcohol content make it the perfect aperitif or pairing with Asian dishes featuring citrus notes.
