- Spätburgunder cultivated according to biodynamic principles and permafrost viticulture. Spontaneous fermentation in open stainless steel fermenters, ageing over two winters in used large and half-large oak casks. No chaptalization, deliberately reductive ageing, minimal sulphuring before bottling. Pure craftsmanship.
