Tement’s Verjus Apero Rosso is not a wine in the traditional sense, but rather an aperitif based on unripe harvested grapes. Verjus – from the French „vert jus“, green juice – represents an ancient craft tradition that Manfred Tement interprets with contemporary elegance. The result is an alcohol-free, acidity-driven aperitif with delicate fruit and a refreshing complexity that hovers between grape juice and vinegar, without being either.
Terroir & Origin
The South Styria region with its steep vineyard slopes and Pannonian-Mediterranean climate influence is Austria’s most renowned white wine region. The Tement winery in Berghausen is among the pioneers of the region and has cultivated the demanding Opok and slate soils for generations. The grapes used for Verjus come from the same vineyard sites that produce the estate’s great wines – a terroir renowned for crystalline acidity structures and mineral precision.
Grape Variety & Vinification
For production, unripe grapes are harvested during thinning in midsummer – those berries that would be removed anyway to increase the concentration of the remaining grapes. This sustainable practice transforms a by-product into a standalone product. The extracted juice is gently pressed and preserved, without fermentation, thereby retaining the natural acidity and fresh fruitiness. The red variant obtains its colour through brief skin contact with red grape varieties.
Food Pairing Recommendations
Serve as an aperitif neat with ice cubes and mineral water or as the base for creative alcohol-free cocktails. In the kitchen, Verjus elegantly replaces lemon juice or vinegar and pairs particularly well with raw fish, oysters, summer salads and grilled vegetables. A refined ingredient for vinaigrettes and deglazing.
