Colour & appearance

Nose

An aromatic profile of precise freshness: small red berries such as lingonberry and redcurrant meet the tart fruitiness of rhubarb. Elderflower lends a floral lightness, whilst pomegranate contributes an exotic depth.

Palate

Juicy and charming, with a stimulating acidity that whets the appetite. More refined than lemon juice, this verjus enlivens the palate without overwhelming it – an alcohol-free delight with genuine structure.

Finish

Refreshing and clear, with a persistent mineral note reminiscent of the limestone soils of Southern Styria.

Terroir & origin

The grapes for this verjus come from the steep vineyard sites of Southern Styria, where the Tement estate has cultivated the dramatic limestone terraces on both sides of the Slovenian border for generations. The region’s cool nights and mineral-rich soils shape its precise acid structure.

Grape variety & vinification

Verjus – the sour juice of unripe grapes – is produced here from red wine grapes. Gently pressed and bottled without fermentation, it retains its natural freshness along with its high content of minerals and antioxidants.

Food recommendations

Served neat as a refreshing aperitif or diluted with water to accompany light dishes: grilled fish, asparagus with vinaigrette, Asian salads or fresh goat’s cheese on crusty bread. Also indispensable as a base for refined dressings and sauces.
