Nerello Cappuccio

Nerello Cappuccio is the second voice in the choir of Etna wines. Whilst Nerello Mascalese delivers finesse, Cappuccio brings colour, body and its own aromatic dimension into play: dark berries, clove, bay leaf, an earthy depth. The grape is rarely vinified as a single variety – it is born as a complement, not a soloist.
The name „Cappuccio“ (hood) refers to the characteristic shape of the grape bunch or the dark skin colour. On Etna, it traditionally plays a supporting role in the blend, usually 10–20 per cent, sometimes a little more. I Vigneri di Salvo Foti treats the grape with the same respect as Mascalese – old vines, Alberello training, long maceration times. Here it becomes clear that Nerello Cappuccio is more than just blending material: an independent grape variety that lends a different nuance to the volcanic origin.
