Nerello Cappuccio finds its home on the dark volcanic soils of Mount Etna. While its more common partner Nerello Mascalese provides the tight structure, this variety – named after its hood-like leaf shape – brings a deeper colour, juicy berry fruit and an inviting suppleness to the wines. It characteristically exudes aromas of dark cherries, wild herbs and fine spice, supported by a vibrant acidity that lends an animating freshness to the wines.
The work of I Vigneri di Salvo Foti demonstrates just how indispensable this character is for the volcano’s traditional cuvées. In the classic I Vigneri Rosso, the variety blends harmoniously with Nerello Mascalese to create a dense, red-fruited and highly drinkable flow. In the multi-layered cuvée Vinupetra Rosso, Grenache is also added, bringing the spicy depth of the volcanic terroir to perfect fruition.
