Wine Description for Sauvignon Blanc „Chalk & Chalk“ South Styria DAC 2025 by Tement

Character
The vineyard site name is programme: Tement’s „Chalk & Chalk“ brings the mineral essence of South Styrian soils directly into the glass. With a moderate 12% alcohol content, this Sauvignon Blanc embodies that precision and freshness for which the Tement winery has been internationally celebrated for decades. A wine that combines substance with elegance and demonstrates the Austrian interpretation of this varietal at the highest level.
Terroir & Origin
South Styria is regarded as the heartland of Austrian Sauvignon Blanc, and the chalk-rich soils of this region impart their characteristic tension to the wines. The Pannonian climate with warm days and cool nights enables a long ripening period whilst preserving the acid structure. Tement manages some of the finest vineyard sites in the region and masterfully understands how to make the geological identity – here specifically chalk and limestone – tangible in its wines. These soils create that crystalline minerality which distinguishes South Styrian Sauvignons from their international counterparts.
Varietal & Vinification
Sauvignon Blanc has found its Austrian home in South Styria since the 1980s. Tement is among the pioneers who proved that this varietal can achieve world-class level here. Vinification at Tement is carried out with artisanal care: precise harvesting, gentle processing and controlled fermentation preserve the aromatic purity and freshness. The maturation emphasises fruit and minerality without being overwhelmed by excessive oak or extended lees contact – an approach that gives terroir pride of place.
Food Pairing Suggestions
A versatile companion to modern Austrian cuisine: excellent with asparagus in all its forms, goat’s cheese, pan-fried crayfish or char. The mineral structure harmonises perfectly with oysters and seafood, whilst the lively acidity also pairs well with pumpkin seed oil salad or Styrian fried chicken. A wine that suits both fine dining and relaxed wine tavern fare.
