Character
Tom Lubbe of Matassa is one of the pioneers of the natural wine movement in Roussillon. His Olla Rouge is a deliberately light-footed, easy-drinking wine with just 10% alcohol – a radical rejection of the often opulent, high-alcohol Roussillon clichés. The unconventional blend of Grenache, Macabeu and Grenache Gris creates a refreshing, almost rosé-like character that prioritises fruit and minerality over power. The name references the region’s traditional clay vessels – a commitment to artisanal authenticity.
Terroir & Origin
The Roussillon region on the French-Spanish border is characterised by Mediterranean climate, strong winds and sparse slate soils. Matassa’s vineyards lie in the foothills of the Pyrenees, where cool night air and old vines provide natural freshness. Lubbe works biodynamically and consistently eschews oenological interventions – his wines are unfiltered, unrefined and aged with minimal sulphur. The Vin de France classification allows him maximum creative freedom beyond rigid appellation rules.
Grape Variety & Vinification
The combination of red and white Grenache with the white variety Macabeu is unconventional and typical of Lubbe’s experimental approach. Early harvesting and gentle extraction create a wine of remarkable lightness and drinkability. The low alcohol content is intentional – it underscores the philosophy of a wine that invites enjoyment rather than demanding contemplation. Spontaneous fermentation with wild yeasts and ageing without new oak barrels allow fruit and terroir to shine through unadulterated.
