- Alta Alella is among the pioneers of Catalan Cava production and demonstrates with this Brut Nature made from pure Xarel·lo that sparkling wine without dosage need not involve compromise. The winery in the coastal hinterland north of Barcelona operates biodynamically and focuses on indigenous grape varieties. The absence of residual sugar reveals the mineral structure and the varietal character strength typical of Xarel·lo – a Cava for purists that prioritises authenticity over pleasing sweetness.
- Terroir & Origin
- The D.O. Alella is one of Spain’s smallest appellations and benefits from its proximity to the Mediterranean as well as the granitic soils of the coastal mountains. The maritime climate with cooling breezes tempers the Catalan sun and preserves the natural acidity of the grapes. Alta Alella cultivates its vines in the hills between 90 and 280 metres altitude, where the combination of granite, sea air and elevation produces wines of remarkable freshness and tension.
- Grape Variety & Vinification
- Xarel·lo is the backbone of many great Cavas and displays its full personality here: structured, spicy, with pronounced acidity and an almost saline minerality. The variety ripens late whilst retaining its freshness – ideal for traditional bottle fermentation. As a Reserva, this Cava spent at least 15 months on the lees, which gives it complexity and a creamy texture without obscuring the crystalline clarity. The decision for Brut Nature (zero grams dosage) is a statement: the wine should speak for itself.
- Food Pairing Suggestions
- The saline minerality and bone-dry orientation make this Cava the ideal companion for seafood, oysters, grilled octopus or boquerones. It also shines alongside Manchego, Jamón Ibérico or fried artichokes. The half bottle is perfect for two people as an aperitif or with a light lunch by the sea.
