Wine description for Hefeabzug Grüner Veltliner trocken 2024 by Nikolaihof
- Colour & appearance
- Pale straw yellow with pronounced greenish reflections.
- Nose
- Profound and calm, yet intense at the same time: dried hay, wild herb meadow and fresh yeast notes shape the opening, accompanied by dried blossoms and fine straw-like nuances. The fruit deliberately remains in the background — bergamot, yuzu, discreet pome fruit, yellow nectarine and juicy vineyard peach. This is spiced up by white pepper, fennel, young maize and the delicately bitter aromatics of fresh hop bines; almonds, freshly cut walnuts and macadamia lend creaminess, while local herbs such as chervil, marjoram and watercress add extra freshness.
- Palate
- Mellow, creamy, remarkably substantial — and yet never heavy. The yellow-fruited aromatics combine with the creamy yeast texture to create a dense, almost silky mouthfeel. The acidity steps back without any loss of tension: the dynamism arises from the phenolic finesse, the inner density and a vibrant, energetic presence. Fine bitter compounds and mineral spice interlock with precision.
- Finish
- Long, deep and of remarkable inner calm — lingering with nutty-spicy notes and a final impulse of herbs and citrus.
- Terroir & origin
- The grapes come from various, partly terraced vineyard sites in the Wachau with soils of clay, loess and paragneiss. Nikolaihof stands on Roman foundations dating back to 63 BC; the “Im Weingebirge” vineyard is considered the first documented vineyard in Europe.
- Grape variety & vinification
- Grüner Veltliner, aged for six months sur lie on the fine lees and then drawn off — without filtration, on a fruit day according to the lunar calendar. Dry, moderate 12.0% ABV.
- Food recommendations
- A versatile everyday wine: with Wiener Schnitzel, asparagus with sauce hollandaise, trout meunière, spring vegetables or fresh goat’s cheese — wherever herbal spice and creaminess are called for.
- Special features
- Nikolaihof is Austria’s first Demeter-certified estate (since 1971) and is regarded as the oldest Demeter winery in the world — to this day the only certified biodynamic producer in the Wachau. Rather than relying on power, the estate focuses on elegance and longevity; this Hefeabzug demonstrates that impressively: depth instead of volume.
