The Enoteca Brut Nature 2011 by Gramona represents the pinnacle of Catalan sparkling wine craftsmanship. As a Brut Nature, this Cava comes entirely without dosage – a sign of the utmost confidence in the quality of the grapes and artisanal precision. With over a decade of maturation on the lees, this sparkling wine develops that complex depth and creamy texture that elevates it far beyond conventional Cavas and places it in the league of serious Champagnes.
Terroir & Origin
Gramona manages its vineyards in Penedès, the heartland of Cava production south-west of Barcelona. The family has cultivated autochthonous grape varieties on calcareous soils for generations, which impart their characteristic mineral tension to the wines. The Mediterranean climate with cool nights enables slow, physiologically balanced ripening – a prerequisite for sparkling wines with ageing potential and finesse.
Grape Variety & Vinification
The cuvée from Xarel·lo and Macabeo forms the traditional backbone of top-quality Catalan sparkling wines. Xarel·lo contributes structure, acidity and that spicy minerality which gives the wine backbone. Macabeo complements with floral notes and elegant fruit. The traditional bottle fermentation according to the Méthode Champenoise and the exceptionally long lees ageing of over ten years transform these base wines into a sparkling wine of remarkable complexity. Gramona practises biodynamic viticulture and sees itself as a custodian of Catalan winemaking tradition.
Food Pairing Recommendations
A sparkling wine of this maturity and concentration deserves discerning accompaniment: oysters, scallops or grilled langoustine harmonise with the saline minerality. Equally recommended are Ibérico ham, aged Manchego or truffle dishes. The absence of dosage makes it the ideal companion for raw fish, sashimi or ceviche. An aperitif wine for connoisseurs that also impresses on its own.
