- Colour & Appearance
- Luminous amber with golden reflections, testament to the long maturation in oak casks.
- Nose
- A fascinating complexity unfolds in the glass: yeast nuances meet intense fruit aromatics. Tahitian vanilla harmonises with preserved raisins and fruits from the rumtopf. An entire kaleidoscope of candied fruits – pineapple, date, fig, apricot – is accentuated by fresh orange and mandarin zests. The spice rack opens with clove, cardamom and cinnamon, whilst the wood contributes profound, balsamic notes of leather, coffee and chocolate.
- Palate
- On the palate, candied zests and ginger dominate alongside the dried fruits. The spices and a herbal freshness structure this extraordinary pomace brandy. Fifteen years of maturation have smoothed all the edges. The raisiny character, paired with delicate sweetness and abundant vanilla, clings to the palate for minutes. A fine pungency and pleasant bitter note set elegant counterpoints.
- Finish
- Remarkably long and persistent. The brandy flows slowly across the palate and lingers there for several minutes – a sign of the highest quality and perfect maturation.
- Terroir & Origin
- From Burgundy, a region renowned not only for great wines but also for exceptional spirits. The vines have been farmed biodynamically since 1983 – a rarity for distillate base materials.
- Grape Variety & Vinification
- Based on Chardonnay and Aligoté – Boris Champy deliberately favours white grape varieties here for a more elegant result. Distilled by Mathieu Sabbagh of Alambic Bourguignon. The assemblage consists of spirits with a minimum of 15 years maturation in small oak casks. Bottled at cask strength at 49.6% vol. without chill filtration or dilution.
- Food Pairing Suggestions
- Perfect with Baba au Rhum, Crêpes Suzette or as a companion to a Davidoff Aniversario Short Perfecto. Also a memorable experience enjoyed solo as a digestif.
- Special Features
- The name Ultreia – a medieval pilgrim’s call on the Way of St James („onwards, ever upwards“) – is programme. Only 200 bottles are produced annually. A spirit that unites patience, craftsmanship and biodynamic philosophy – a unique creation from Burgundy.
