Emmanuel Brochet, one of the respected Champagne producers with a biodynamic approach, distils here a Marc de Champagne – a pomace brandy that captures the aromatic essence of Champagne in concentrated form. At 50% vol., this is a powerful distillate that reflects the artisanal tradition of the region. Marc de Champagne is created from the pressing residues of grapes and thus preserves the varietal-typical aromas of Champagne grape varieties in distilled form.
Terroir & Origin
Champagne is primarily known for its sparkling wines, yet the production of marc has a centuries-old tradition here. Brochet works in Écueil in Montagne de Reims, where he manages his vineyards biodynamically. This philosophy continues into the distillation: what begins in the vineyard with respect for terroir finds its completion in the careful processing of the pomace. The chalky soils of Champagne shape not only the wines but also the mineral foundation of the distillate.
Grape Variety & Vinification
Marc de Champagne is traditionally produced from the pressing residues of Pinot Noir, Pinot Meunier and Chardonnay – the classic Champagne grape varieties. Distillation follows traditional methods, with the art lying in preserving the delicate aromas whilst avoiding harshness. With Brochet, one can expect artisanally precise work that continues his wine philosophy. Storage in small containers allows for controlled maturation and harmonisation of the distillate.
Food Pairing Recommendations
Marc de Champagne is classically a digestif enjoyed neat at room temperature. It harmonises beautifully with dark chocolate, nougat or candied fruits.
