Colour & Appearance
Pale ruby red with luminous reflections and deliberately unfiltered, visible cloudiness – a clear statement for natural wine purism.
Nose
Polarising and uncompromising. Behind a veil of reduction unfolds energetic fruit: wild raspberries, sour cherry and morello cherry. Yet that’s only half the story. Rustic, untamed aromas push to the fore – hints of goat shed, dried wild herb grass and Southern European farmyards. Ethereal, invigorating, but definitely not for conformists. A wine that demands conviction.
Palate
At just 11% alcohol, a radical lightweight that convinces through tension and structure. Fresh, juicy, taut – almost skeletal in its length. The precise tannin forms the backbone without which this wine would fall apart. The highly expressive acidity stands like an exclamation mark in the room. Ethereal notes dominate: pine needles, rosemary, wild herbs against a backdrop of blackcurrant and raspberry. The natural fermentation leaves a striking impression of fresh sauerkraut – polarising, yet consistent.
