- Colour & Appearance
- Luminous golden yellow with bright reflections and a rapid, fine-beaded mousse – visually already a promise of liveliness and energy.
- Nose
- Expressive and unvarnished: grilled pineapple, ripe pear and bitter orange meet Cox Orange apple and tart apple notes. Citric, almost cider-like nuances join in. The whole thing feels enormously fruity, as if the fruit had just been pressed – pear skins, apple skin, quince must – a fascinating blend of juice, pulp and delicate tannicity that recalls the rawness of natural fermentation.
- Palate
- The fruit expression continues on the palate, accompanied by warm spices: cinnamon, cardamom, dried herbs such as thyme, marjoram and oregano. A hint of yeast, salt spray and pecan nut lend complexity. The texture is remarkable: it feels like damp stone and sea spray at once – mineral, almost marine. A creamy base reminiscent of butter brioche, embedded in the fine, airy structure of a sparkling wine that holds substance and lightness in perfect balance.

- Long, saline-mineral with sustained freshness and a fine, chalky texture that recalls the limestone-rich soils of the vineyard site.
- Terroir & Origin
- The vineyard site Rascara with its Xarel·lo vines planted in 1999 on extremely limestone-rich soils fundamentally shapes this wine. The mineral depth and the almost stony texture are direct translations of this unique terroir.
- Grape Variety & Vinification
- Radical purism: fermentation begins already in the vineyard and is used as a starter. No additives, no yeasts, no sugar, no sulphur – neither fining nor filtration. The base wine matured in 300-litre oak barrels, bottle fermentation lasted over 5 years and 4 months. At a lean 10.5% alcohol and under 0.5 g/l residual sugar, an elegant lightweight with serious character.

- Oysters, scallops, monkfish with herb crust, grilled octopus, goat’s cheese, Parma ham with melon or simply Manchego – the saline minerality and herbal notes make it the ideal companion to Mediterranean cuisine.
