  • The Beaune 1er Cru Aux Coucherias from Boris Champy comes from a steep, west-facing parcel with vines over 70 years old, managed biodynamically since 1985. This elegant Pinot Noir from the 2021 vintage was vinified using a special millefeuille technique and aged for twelve months in barrique.

Wine Description for Beaune 1er Cru Aux Coucherias AOP 2021 1500ml Magnum by Boris Champy

Colour & Appearance
Quite transparent carmine red, which already announces Burgundian elegance and finesse in the glass.
Nose
A complex bouquet of raspberries, wild strawberries, cherries and subtle plums. Beneath this, an earthy minerality with gravel notes that recall the chalky terroir. Stems, violets and foliage lend the wine a spicy, cool dimension, whilst lactic nuances provide additional depth.
Palate
Champy achieves a masterclass in Beaune typicity here: juicy, fresh and with remarkable earthiness. The Pinot Noir presents itself cool and energetic with supple tannins. Tart fruit of cherries, barberries and sumach dominates the palate, accompanied by green yet ripe stem notes. The 2021 currently appears lean and somewhat austere – a wine that requires time or demands robust food pairing.
Terroir & Origin
The west-facing parcel in Aux Coucherias near Bouze-lès-Beaune was planted in the 1950s. The steep vineyard with dark clay and chalk has been farmed biodynamically since 1985. The high vine density of around 10,000 vines per hectare in Guyot training and isolation by trees and gorse create a unique microclimate.
Grape Variety & Vinification
Pinot Noir, 12.5% vol. Due to botrytis issues in the 2021 vintage, Champy opted for an unconventional method: complete destemming, sulphur treatment of the stems and a mille-feuille layering of destemmed grapes and stems. Aged for twelve months in barrique. Magnum format (1500ml).
Food Pairing Suggestions
The freshness and structure harmonise beautifully with lamb cutlets on red lentils with oregano, cumin and turmeric, pulled pork vindaloo or surprisingly also with braised green beans with datterini tomatoes, cardamom and garlic.
