Colour & Appearance
Presents in the glass with a fairly translucent carmine red.
Nose
A cool and earthy profile shapes the bouquet. Notes of raspberries, wild strawberries, ripe cherries and plums meet nuances of crushed gravel, lactic hints, as well as delicate aromas of violets and damp fallen leaves.
Palate
On the palate, this Pinot Noir displays the clear typicity of its appellation with abundant freshness, energy and juiciness. The fruit is driven by barberries, cool cherries and piquant sumac, underpinned by ripe, green stem notes. The tannins present as supple, while the structure of the 2021 vintage is lean and currently displays a pleasantly strict edge.
Terroir & Origin
The steep, west-facing Premier Cru parcel Aux Coucherias is situated near Bouze-lès-Beaune. Isolated by trees and gorse, it is defined by dark clay and limestone. The higher elevations of the region offer a natural guarantee of freshness in times of climate change.
Grape Variety & Vinification
Pure-bred Pinot Noir from high-density vines (10,000 vines/ha) planted in the 1950s. Due to the cool vintage, Boris Champy employed a sophisticated layering technique: the grapes were fully destemmed, while the stems were separately treated with sulphur and fermented as a layered mille-feuille. Ageing took place over twelve months in barriques.
Food Pairings
Pairs brilliantly with richly spiced meats such as lamb chops on red lentils with oregano, cumin and turmeric or pulled pork vindaloo. Vegetarian dishes like braised green beans with Datterini tomatoes, cardamom and garlic also benefit from its cool acidic structure.
