Wine Description for Beaune 1er Cru Aux Coucherias AOP 2020 by Boris Champy

Colour & Appearance
Intense, luminous purple in the glass – a colour depth that promises concentration and substance.
Nose
Whole-bunch fermentation distinctly shapes the bouquet: grape stalk combines with ripe black cherries, plums and blackberries. A slightly lactic note recalls creamy yoghurt with blackcurrants. Added to this are vanilla, liquorice and hints of dark chocolate – a complex, multi-layered play of aromas.
Palate
Juicy and extract-sweet, the Aux Coucherias presents itself on the palate. The texture recalls liquid milk chocolate, underpinned with cinnamon, cherries and vanilla. Despite its opulence, the wine remains lively and energetic – the grape stalks lend it structure and welcome edges. A Pinot Noir with backbone, combining maturity with tension.
Finish
Persistent, creamy and with fine spice that elegantly accompanies the dark fruit aromas.
Terroir & Origin
The steep, west-facing parcel in Aux Coucherias near Bouze-lès-Beaune is characterised by dark clay and limestone. The vines from the 1950s stand isolated by trees and gorse in the Clos Montchovet – a vineyard site that Boris Champy knows from his time at Louis Jadot.
Grape Variety & Vinification
Pinot Noir from biodynamically farmed vineyards (since 1985), vine density of 10,000 vines per hectare. Harvest on 12 August. 60% whole-bunch fermentation, twelve months ageing in barrique. Moderate alcohol content of 12.5% vol. – a sign of elegance rather than power.
Food Pairing Suggestions
Perfect with terrine of young wild boar with wild salad and toasted brioche, beef tataki or porcini risotto with grated Mimolette. The wine handles bold flavours without losing its finesse.
