Colour & Appearance
Pale straw yellow with a delicate salmon-rosé shimmer – the Pinot Noir origin reveals itself subtly. The perlage is fine, even and of medium size, with clear reflections that signal precision and care in vinification.
Nose
Intense and multi-layered: dried meadow herbs, thyme, lavender and marjoram dominate the opening – an aromatic complexity reminiscent of southern French garrigue. These are joined by roasted hazelnut, almond shell and sourdough, whilst the fruit remains subtle: redcurrants, wild strawberries, candied pear and candied ginger. Cool, mineral notes of stone and delicate smoke lend the bouquet an elegant, almost mystical depth.
Palate
Uncompromising and linear. A taut, precise acidity immediately commands attention and pushes the fruit into the background.
