The “Aus den Gärten” represents the light-footed, accessible side of Nikolaihof – a Federspiel in the truest sense of the word. Named after the falconry term for a lightweight lure carried on the wrist, this Wachau classification promises a wine of elegance and drinking pleasure, which impresses not through heaviness, but through vibrancy and precision.
Terroir & Origin
The Nikolaihof in Mautern is one of the oldest wine estates in Austria and has been a beacon of biodynamic agriculture in the Wachau for decades. The Danube decisively shapes the microclimate of this narrow river landscape: cool nights, warm days and the characteristic weathered primary rock soils of gneiss and mica schist lend the wines a mineral tension that is hard to find so pronounced anywhere else in Austria. The Federspiel level corresponds to wines from less exposed vineyard sites or younger vines – and yet this wine, too, unmistakably bears the signature of the Wachau terroir.
Grape Variety & Vinification
The Grüner Veltliner is Austria’s great indigenous grape variety – and in the Wachau, it finds one of its most compelling expressions. Typical of the variety are a lively acid structure, spicy notes of white pepper and fresh herbs, as well as a clear, straightforward fruit. Nikolaihof vinifies its wines with the utmost respect for the raw material: biodynamic cultivation, gentle pressing and an ageing process that preserves the natural texture of the grape. The “Aus den Gärten” is designed for fresh accessibility – without losing any of its depth or identity.
Food Pairings
An ideal companion for Austrian cuisine in its most uncomplicated form: Wiener Schnitzel, pan-fried trout with almond butter or a simple potato salad harmonise wonderfully with the spice and freshness of the Grüner Veltliner.
