Alexandre Chaillon

As an engineer, Alexandre Chaillon could have stayed comfortably in Paris. Instead, he returned to Aÿ in 2017, took over the vines from his mother's Vollereaux family and learned the craft from Anselme Selosse. Today he is President of the Jeunes Viticulteurs de Champagne and campaigns for herbicide-free viticulture – in the tradition of pioneers like Georges Laval. He farms his 3 hectares in the Coteaux Sud d'Épernay organically, vinifying in oak barrels and stoneware eggs. 59 per cent Chardonnay, 8,000 bottles – no more, no more needed.
