Wine Description for Verjus Apero 740ml by Tement

Character
Verjus – the juice obtained from unripe harvested grapes – is not wine in the classical sense, but rather a culinary cultural heritage with a long tradition. Tement, one of the most renowned addresses in South Styria, interprets this ancient craft with customary precision. The result is an alcohol-free, vibrantly acidic beverage that convinces with its fresh, herbaceous-fruity elegance – ideal as an aperitif companion or as an ingredient in fine cuisine.
Terroir & Origin
South Styria ranks among Austria’s most exciting wine regions – characterised by gently rolling hills, a continental-Mediterranean transitional climate and mineral-rich soils of limestone, slate and opok. Tement has managed its vineyard sites with the greatest care for generations and has been instrumental in establishing this region’s reputation internationally. The same care that flows into the vineyards benefits this verjus as well: the grapes are deliberately harvested early to preserve maximum fresh acidity and natural vitality.
Grape Variety & Vinification
Verjus traditionally originates from unripe harvested wine grapes, whose natural sugar content has barely developed – resulting in an almost alcohol-free product with pronounced wine acid structure. Vinification follows the principle of reduction: no alcohol, no fermentation, instead gentle pressing and bottling that preserves the natural acid interplay of the fruit. The result is a product of great purity and artisanal integrity.
Food Pairing Recommendations
Verjus is a versatile companion at the table and in the kitchen. As an aperitif – served neat or with water and ice – it offers an elegant, alcohol-free alternative. In the kitchen, it replaces vinegar or lemon in vinaigrettes, sauces and marinades, without dominating. Particularly harmonious: with grilled fish, goat’s cheese, salads with bitter herbs or as a base for alcohol-free cocktails.
