Terroir & Origin
Recaredo’s vineyards lie in Alt Penedès, the higher elevation section of the Cava region, where chalky soils and the Mediterranean climate with continental influences create ideal conditions for Xarello. The vineyard site Turo d’en Mota benefits from old vines whose roots run deep into the mineral-rich subsoil. These soils impart the saline minerality and structure that fundamentally distinguish this wine from industrially produced Cavas.
Grape Variety & Vinification
Xarello is the underrated soul of great Cava – a grape variety that unites freshness, complexity and ageing potential. At Recaredo it is treated with utmost respect: spontaneous fermentation, extended yeast ageing of at least five years for Enoteca bottlings, and Brut Nature means zero grams of residual sugar. The moderate alcohol content of 12% speaks to perfect ripeness without over-extraction. Bottle fermentation using the traditional method and the long maturation period develop those tertiary aromas and creamy texture that make this wine a meditation drink.
Food Pairing Suggestions
A wine of this maturity and complexity deserves thoughtful accompaniment: aged Manchego, Jamón Ibérico de Bellota, roasted porcini mushrooms or sea urchin. The saline minerality harmonises beautifully with raw oysters or scallops. Also an sublime choice with roasted capon or calf’s sweetbreads.
