Wine description for semicolon ; Sissi 2021 by Nikolaihof

Colour & Appearance
Deep golden yellow with amber reflexes, naturally cloudy – a visual statement for uncompromising naturalness.
Nose
Intense and multi-layered: wine yeast and ripe apples dominate initially, followed by apple compote, quince and vineyard peach. These are joined by hay, dried flowers, a hint of honey, the bitter note of peach kernels and wild herbs. A nose that awakens curiosity and invites discovery.
Palate
Precise, dry and yeasty-spicy – this wine demands attention. With only 11% alcohol, it displays remarkable freshness and simultaneously surprising smoothness. The texture is lively, the structure clearly defined. A wine that consciously turns away from the mainstream and embodies a purist, almost ascetic elegance.
Finish
Lingering herbal-spicy with a fine yeast note that resonates long and tempts you to take another sip.
Terroir & Origin
From the Wachau, one of Austria’s most prestigious wine regions. The biodynamically-managed Nikolaihof is among the pioneers of nature-aligned winemaking in the region.
Grape Variety & Vinification
Gemischter Satz – various grape varieties harvested and fermented together. The semicolon project by Katharina Salzgeber and Nikolaus Saahs deliberately experiments with alternative harvest timings and production methods. Spontaneous fermentation, yeast ageing, unfiltered – a wine that sheds the straitjacket of traditional conventions.
Food Pairing Recommendations
Perfect with purist, herb-focused cuisine: steamed vegetables, fennel risotto, goat’s cheese with herbs, artichokes or grilled asparagus. Also an exciting pairing with sushi or fermented dishes.
Special Features
A wine for discerning drinkers who question conventions. The semicolon project understands itself as an oenological punctuation mark – open to interpretation, free from dogma. A must for natural wine enthusiasts and experimentally-minded connoisseurs.
