Colour & Appearance
Intense straw yellow with copper-coloured reflections, which point to the impressive maturity of this extraordinary Champagne. The perlage displays itself elegantly and persistently – a visual promise of the complexity to follow.
Nose
Here the full magic of the Solera principle reveals itself: almond croissants, hazelnuts and fresh bread crust initially dominate with their noble maturity. Yet then the Mémoire surprises with vibrant freshness – red berries, crisp apples, mirabelle plums and kumquats lend the bouquet a fascinating complexity. This duality between maturity and freshness is remarkable.
Palate
On the palate, a balanced structure reveals itself with impressive density and substance. The saline minerality and the pronounced, mature acidity form the backbone of this Champagne. The Solera brings mellow apple notes and nuances of lightly candied fruits into play, without appearing heavy. The subtle dosage of just 1.2 grams fits perfectly into the overall picture.
Finish
