Colour & Appearance
Luminous lemon yellow with golden and green reflections. The perlage is fine and active, the mousse delicate – typical of a Brut Nature that forgoes dosage and places its authenticity front and centre.
Nose
The 78 months on yeast have imparted impressive complexity to this Blanc de Noirs. Warm notes of mirabelle plums and peach evoke sweet fruit cake, whilst Tarte Tatin and salted butter brioche underscore the autolytic yeast aromas. Tropical hints of pineapple and mango linger subtly in the background. The counterpoint comes from the fresh side: lime and lemon zest, maritime sea spray, oyster shell and damp chalk lend the wine a cool, mineral tension.
Palate
The attack immediately reveals the versatility of this extraordinary sparkling wine. Warm fruit meets creamy yeast autolysis, which dominates proceedings with considerable pressure and lingers on the palate for minutes. Alongside this unfolds a crisp mineral structure of remarkable elegance. Opulence is nowhere to be found – instead, complexity and length impress. Almond and hazelnut aromas characterise the finish persistently.
Finish
Long, mineral and of sustained precision. The nutty notes remain present, whilst the saline minerality provides a refreshing, thirst-quenching conclusion.
