- Deep luminous cherry red with brightening reflections towards the rim – youthful, intense, transparent.
- Nose
- Fascinatingly ambivalent between brightness and depth. Wild strawberries meet sour cherries, mulberries and elderberries – all veiled by a floral, almost mystical haze. Beneath lurk spicy notes of clove, pepper and juniper, accompanied by earthy hints of forest floor and chalk. A subtle herbal spice rounds out the complex aromatic profile.
- Palate
- Silky on the attack, then an impressive acidity sets in, driving the wine powerfully forward. The high astringency creates an irresistible drinking flow. A fascinating interplay between juiciness and austere minerality. The dark fruit merges with floral elements into a bundled, elegant taste experience.
- Finish
- Long and multifaceted. Reminiscent of freshly broken twigs – juicy-green and simultaneously woody. Subtly smoky accents harmonise with abundant fruit and fine herbal freshness. Remarkably persistent.
- Terroir & Origin
- The Gimmeldinger Biengarten is a VDP Erste Lage that extends over steep terraces at the forest edge. The tertiary limestone marl lies on the same limestone reef as the Grand Crus Idig and Ölberg. The old vines planted in 1982 on 1.1 hectares with east/east-southeast exposure produce loosely-berried grapes in a sheltered hollow.
- Grape Variety & Vinification
- Spätburgunder from biodynamic cultivation, harvested on 21 September 2021. Spontaneous fermentation with 10% whole bunches, maturation until February 2022 in barrique (10% new wood), bottling May 2023. The magnum bottle (1500ml) promises optimal ageing potential.
- Food Recommendations
- Celeriac steaks with parsley pesto, warm aubergine salad with tomatoes and pine nuts, tagliatelle with radicchio and lemon. Also a delight with roasted poultry or semi-mature hard cheese.
