- Colour & Appearance
- Luminous, pale straw yellow with golden reflections. The perlage is restrained yet lively – fine, delicate bubbles rise elegantly. A visually understated, yet precise presence.
- Nose
- Here unfolds a fascinating aromatic panorama that clearly sets itself apart from conventional Cavas. Rather than classic citrus notes, a yellow-fruited, voluminous profile dominates: apricot, mirabelle plum, peach and khaki fruit meet yeast pastries, butterscotch and shortbread. Spicy accents of cinnamon and white pepper meld with nutty notes – almonds, cashew – and dried Mediterranean herbs such as sage, thyme and oregano. Between these, grilled pineapple and unripe green mango flash through. The whole remains chalky-calcareous in structure, bright and transparent – distinctive despite its traditional winemaking.

- The carbonation grips with precision, bringing freshness and structure. This Cava remains lean and racy, carried by a balanced tension between yellow fruit, acidity and a marked, yet stylishly restrained minerality. In the background, pale nutty notes unfold – almonds, cherry stones, hazelnuts – along with delicate hints of linden and apple blossom. The Mediterranean spice works subtly, yet structurally effective. Finesse and accessibility are the clear strengths: plenty of character, yet charming, clear and stimulating.

- Persistent, chalky-mineral with lingering yellow fruit and a refreshing acidity structure that invites the next sip.
- Terroir & Origin
- The Xarel·lo vines stand in direct proximity to the sea on sandy granite soils at 100 to 220 metres elevation. This exposed location on the Mediterranean shapes the wine with its saline minerality and Mediterranean herbal spice.
- Grape Variety & Vinification
- Pure Xarel·lo (locally called Pansa Blanca), vinified according to the Méthode Ancestrale: fermentation begins in tank and finishes in bottle. 15 to 24 months on lees provide complexity. The wine is unsulphited and as Brut Nature completely dry – authentic and purist.
