Colour & Appearance

Luminous lemon yellow with green reflections – a visual promise of freshness and concentration.

Nose

A monumental Sauvignon Blanc that displays fruit and ripeness in impressive balance. Passion fruit and mango dominate initially, followed by grilled pineapple, apricot and peach. Yet what truly distinguishes this wine is the 30-month lees ageing, which hovers like a point of repose above the fruit and lends it a serious, mature personality. The calcareous subsoil makes itself known as a mineralic tension running through the wine. An entire herb garden unfolds: mint, coriander, thyme, lemon balm and chervil provide enormous complexity.

Palate

Orchestral. The wine builds slowly, then unfolds its full power. Fruit, minerality, spice and freshness act on equal footing – dense and concentrated, yet remarkably graceful. Powerful and intense, without ever appearing heavy-handed. The yeasty note has a softening effect, whilst a subtle sharpness sets distinctive accents. Racy, delicate, characterised by enormous length and seemingly endless. The drinking flow is remarkably smooth despite all the complexity.

Finish

Long-lasting and multifaceted, with mineralic resonance and persistent herbal notes.

Terroir & Origin

The Kapelle parcel lies directly below the Carmelite Chapel at 470 metres elevation. The heavy clay-loam soil on coral limestone is water-repellent and shapes the character sustainably. The 18-year-old vines on 1.48 hectares are the youngest of the entire Zieregg vineyard site, yet benefit from the altitude and the associated coolness.

Grape Variety & Vinification

100% Sauvignon Blanc, spontaneously fermented and aged for 30 months on fine lees in old, small oak barrels. Bottled unfiltered. The 2021 vintage benefited from a cool spring and ideal late summer.

Food Pairing Recommendations

Scallops with herb butter, turbot with beurre blanc, calf’s sweetbreads with morels, aged Comté or goat’s cheese with honey.
