Wine description for Riesling Pünderich Kabinett VDP Ortswein 2025 by Clemens Busch

Character
A Kabinett of remarkable presence despite its lightness. With only 7.5% ABV and luscious residual sweetness, it displays that delicate balance which distinguishes great Mosel Rieslings: the natural sweetness of the grape meets an acidity that does not bite, but rather supports. This is no dessert wine, but a versatile food companion with depth – light on its feet in alcohol, yet possessing the mineral substance one expects from the steep vineyard sites around Pünderich.
Terroir & Origin
Pünderich lies on the banks of the Mosel, where the river traces one of its most dramatic loops. The vines for this village wine are rooted in the steep slopes of the village, including parcels within the legendary Marienburg. The terroir is defined by slate in three colours – red, grey and blue – each imparting distinct mineral signatures to the Riesling. Clemens Busch, who runs the estate as its seventh generation, has eschewed herbicides since 1976 and has farmed biodynamically since 1986 (Demeter-certified since 2015). This decades-long, soil-conscious cultivation allows the vines to penetrate deep into the rock, ensuring access to cooling minerals even in warmer years.
Grape Variety & Vinification
Pure Riesling, as it has been at home on the Mosel for centuries. The vinification follows a philosophy of restraint: spontaneous fermentation in traditional 1,000-litre foudres made of local wood, extended maturation on fine lees, minimal sulphur addition. No cultured yeasts, no technical interventions – only time and patience. The result is a wine that bears the unmistakable signature of its maker: clear, precise, without any cosmetic smoothing.
Food Pairings
The luscious style and moderate acidity make this Kabinett an ideal partner for Asian cuisine – such as Thai curry with coconut milk or Vietnamese summer rolls. It pairs equally well with smoked trout, soft cheese with some maturity, or fruit tarts featuring citrus. Even enjoyed on its own as an aperitif on a balmy evening, it reveals its full charm.
