Wine Description for Ried Rossberg K Morillon 2021 by Tement

Colour & Appearance
Pale straw yellow, luminous and clear – a visual promise of precision and purity.
Nose
This Morillon reveals a fascinating, smoky-dark character. Beneath a delicate reduction, cacao nibs, dried quinces and grapefruit zest unfold, accompanied by hazelnut shells and salted butter. With increasing aeration, the wine shows itself in constant evolution – multifaceted, complex and demanding. A wine that calls for generous glasses.
Palate
On the attack, the Rossberg presents itself impeccably composed, without a trace of fat: sinewy, tall-framed, well-defined. The fruit is reduced to essentials, the extract compact and embedded in gripping phenolics. An distinctive grapefruit twist enlivens the palate, whilst the taut structure carries the 14% alcohol effortlessly.
Finish
In the aftertaste, the dark side is reflected: cacao and nuts, underpinned by saline notes and citric zing. Long, precise, persistent.
Terroir & Origin
The Rossberg is a First STK®-vineyard site with steep slopes inclined towards south-east to south at 370 to 460 metres elevation. The vines, some up to 36 years old, are rooted in sparse, calcareous Opok soils – those characteristic marl soils that give South Styria its mineral signature.
Grape Variety & Vinification
Chardonnay (called Morillon in Austria), farmed biodynamically according to Demeter and respektBIODYN standards. Spontaneous fermentation, followed by 30 months of maturation on fine lees in small French oak barrels. Bottled unfiltered with natural cork – a purist statement.
Food Pairing Recommendations
The sinewy structure and saline minerality predestine this wine for seared scallops, turbot with beurre blanc, calf sweetbreads or aged Comté. Also an intriguing pairing with sushi featuring fatty fish.
