Tom Lubbe of Matassa belongs to those uncompromising winemakers who have radically redefined Roussillon in recent years. His Olla Blanc embodies a philosophy of minimal intervention and maximum drinking pleasure. With just 10.5% alcohol, this wine deliberately prioritises freshness over power – a conscious rejection of southern French heaviness. The magnum bottle not only underscores the festive character, but also guarantees slower, more harmonious maturation.
Terroir & Origin
Roussillon, wedged between the Pyrenees and Mediterranean, offers an extraordinary mosaic of terroirs. Lubbe’s vineyards benefit from Mediterranean sunshine, cool mountain winds and old, ungrafted vines on slate and granite soils. The deliberate choice of VdF classification (Vin de France) allows him maximum freedom – a statement against rigid appellation rules and in favour of artisanal authenticity.
Grape Variety & Vinification
The blend of Macabeu and Muscat is typical of Lubbe’s instinct for Mediterranean grape varieties. Macabeu brings structure, salinity and ageing potential, whilst Muscat contributes aromatic vibrancy and floral charm. Biodynamic viticulture, spontaneous fermentation with wild yeasts and the absence of fining or filtration characterise Matassa’s signature. The low alcohol content points to early harvesting and gentle cellar work – wines that can breathe, rather than impress.
