Young, lively and uncomplicated, yet surprisingly complex – a modern, unusually fresh Cahors Malbec at 12.5 % vol.

Notes
Hand-harvested, spontaneously initiated fermentation, long maceration and twelve months of ageing in cellar amphorae; without fining or filtration, total sulphur only 12 mg/l. Tasting note
Colour & appearance
Deep, almost impenetrable garnet red – darkly toned, as one expects from Cahors, yet with a lively, youthful gleam at the rim.
Nose
Although destemmed, the wine offers an alluring fragrance of stems and stalks – a cool, vegetal undertone that promises freshness. Behind it, crisp red and blue berries, sour cherry, alongside black olives, pine needles, earth and dark wood. With air, fine hints of tobacco, tar and ink emerge. Multi-layered, agile, still deliberately restrained.
Palate
Slender, fresh, easy to drink – a Malbec with real flow. The dark, juicy fruit lies as if embedded in a fine mist of rock dust, a texture owed to the maturation in amphorae. Young, unbound, lively – and yet, in a thoroughly uncomplicated way, of pleasing depth.
Finish
Cool, precise, with fine-grained tannins and a mineral aftertaste of cherry and dry earth.
Terroir & origin
The grapes come from micro-plots at 350 metres altitude within the Clos Troteligotte – 16 hectares of vines surrounded like an island by oak forests and wild meadows. The sidérolithique clay-limestone soil from the Tertiary period is rich in iron. This explains the minerality and coolness of this wine, which are unusual for Cahors.
Grape variety & vinification
100% Malbec at a remarkably low yield of 25 hl/ha. Hand-harvested, destemmed, spontaneously fermented, gently extracted and given a long maceration – then twelve months’ ageing in cellar amphorae. Neither fined nor filtered.
Food recommendations
A natural friend of south-western cuisine: leg of lamb with thyme, cassoulet, grilled duck breast or simply lentils with smoked sausage. It also cuts a fine figure alongside mature hard cheese.
Special features
Emmanuel Rybinski, who took over the family estate from his father Christian in 2004, presents a cool, slender Cahors here. The K-2 – part of his playful K-alphabet, which alludes to the name of the village – was produced almost entirely without sulphur; only at the very end does a minimal addition bring the total sulphur to just 12 mg/l. The result: a Malbec of rare ease that can handle cellaring but already gives great pleasure now.
