Colour & Appearance
Medium golden yellow in the glass, with a vibrant and persistently fine perlage that bears witness to the extended time on lees. The mousse is precise and elegant.
Nose
This sparkling wine opens with impressive complexity: ripe apples and apricots form the fruity core, whilst bread crust and yeasty notes underscore the artisanal maturity. With air contact, a fascinating multi-layered character unfolds – small red fruits from Zweigelt, plums and an entire spectrum of wild herbs. The mineral backbone runs through all the aromas like a golden thread.
Palate
On the palate, the true greatness of this Brut Nature reveals itself: juicy fruit meets distinctive minerality, characteristic of the Wachau. The carbonation is lively and perfectly integrated, lending the wine tension without aggressive sharpness. Remarkable is the stability – even after two days, the sparkling wine stands firm. The zero dosage allows the pure fruit and terroir to speak unadorned.
Finish
Very long and persistent, with a fine saline minerality that lingers for some time. The yeast autolysis aromas merge with the fruit into a harmonious, dry finale.
Grape Variety & Vinification
An unusual, yet convincing blend of Grüner Veltliner, Chardonnay and Zweigelt. Tirage in June 2021, disgorged in November 2024 – thus over three years on the lees. Zéro Dosage (0g/l residual sugar), Méthode traditionelle. At just 11.5% vol., a masterclass in finesse over power.
Food Pairing Recommendations
As the tasting note rightly observes: perfect with umami-rich dishes. Think of aged Parmesan, mushroom risotto, scallops or sushi. Also an excellent choice with smoked fish or oysters.
