Tasting note
Character
The format demands respect: in Doppel-Magnum, this Sauvignon Blanc matures more slowly, retains its freshness for longer and gains in depth. The Spätfüllung – a later bottling following an extended period of maturation – lends it additional complexity. What is in the glass is Southern Styria in concentrated form: crisp acidity that provides backbone, accompanied by fruit ranging from citrus to green apple, underpinned by that chalky coolness one seeks in Ehrenhausen. A wine that needs time and rewards patience.
Terroir & Origin
Ehrenhausen lies in the heart of Southern Styria, where Weingut Tement has been the benchmark for Sauvignon Blanc for decades. The calcareous soils of the steep slopes define the style: wines of tension and structure that express their origin with unmistakable clarity. Manfred Tement recognised the potential of this combination of grape variety and subsoil early on – today his sons Armin and Stefan continue his work. The vineyard sites around Ehrenhausen are among the most demanding in Austria, with gradients that make mechanical work impossible.
Grape Variety & Vinification
Sauvignon Blanc finds an expressiveness in Southern Styria that has attracted international attention. In Tement’s cellar, restraint prevails: wild fermentation, extended lees ageing and the careful use of large wooden casks shape wines of remarkable balance between fruit and depth. The late bottling after three years of maturation gives this wine additional maturity without depriving it of its freshness. The result is a Sauvignon Blanc that demonstrates why Zieregg was once crowned the best of its kind in the world.
Food Pairings
The acid structure and the format make this wine the ideal partner for a long evening with multiple courses. With pan-fried turbot and beurre blanc it reveals its elegance; with Styrian fried chicken and potato salad its regional roots. Asparagus with hollandaise sauce or cured char also find a worthy counterpart in this wine. Those who open it now should decant it – those who leave it to rest for a few more years will be rewarded with additional complexity.
