Colour & Appearance

Clear straw yellow with slightly green reflexes and fine, persistent perlage. The magnum bottle lends the sparkling wine additional elegance in the mousse development.

Nose

A masterclass in Riesling sparkling wine: bright, cool, precise. Citrus and lemon balm lead, followed by mint and crisp stone fruit. These are joined by tree fruit, mineral stone and a fascinating oyster shell note. The typical character of a gin-herb infusion and subtle reduction notes lend the sparkling wine additional complexity and depth.

Palate

Here the true class reveals itself: the sparkling wine builds enormous pressure immediately, feels energetic yet sensual. Fine yeast notes and bread crust meet white-fleshed fruit and citrus. The minerality is present, a salty sea breeze wafts through. The fine perlage carries the mouth-watering salinity perfectly. Terroir & Origin

The grapes come from old vines on the Schlossberg and younger vines on shell limestone soils in the Palatinate. This combination of experience and youth, of depth and freshness, decisively shapes the character of the sparkling wine.

Grape Variety & Vinification

Riesling, spontaneously fermented with complete malolactic fermentation. After brief ageing of the base wine, the second fermentation takes place in the 1,500ml magnum bottle. After four years on the lees, it is hand-riddled and disgorged without dosage. The magnum format favours slower, finer maturation.

Food Pairing Recommendations

Oysters are the natural choice, but scallops, sashimi, sturgeon or caviar also harmonise perfectly. Goat’s cheese, pan-fried monkfish or simple fish carpaccio with lemon and sea salt let the sparkling wine shine.
