Pinot Noir (Pinot Noir)

As one of the world’s oldest cultivated vines, Pinot Noir – known as Spätburgunder in German-speaking regions – reflects its terroir with near-seismographic precision. Originally at home in Burgundy, this variety demands cool vineyard sites and limestone-rich soils. On the Côte de Nuits, Gevrey-Chambertin demonstrates just how powerful it can become on limestone and marl, for the village’s wines rank among the most concentrated and longest-lived reds of Burgundy. In the glass, it typically displays a translucent colour, supported by fine acidity and aromas ranging from fresh wild strawberries and sour cherries to damp forest floor. This finely structured complexity pairs beautifully with roasted poultry or autumnal mushroom dishes.

The variety’s versatility is equally evident in sparkling wine. On the chalky soils of Champagne, it lends structure and mineral tension, which Adrien Renoir harnesses in his precise Grand Cru Champagnes. Along the Loire, by contrast, it translates barren chalk soils into dense red wines of cool clarity, as captured in the bottle by Domaine Vacheron.
