Colour & Appearance
Intense golden yellow, already hinting at the oxidative maturation beneath the flor veil – a colour that promises depth and complexity.
Nose
Unmistakably Jura: The oxidative ageing creates a fascinating aromatic profile of lemon zest and ginger, green walnuts and green apples. These are joined by peaty notes, salted lemons and subtle hints of aged Comté – an aromatic signature found nowhere else in the world.
Palate
Here the true class of this Vin de Voile reveals itself: An electrifying freshness meets remarkable depth and energy. The wine unites apparent opposites – powerful and full-bodied, yet simultaneously clear and precise. The slightly silky, dense texture carries nutty and earthy elements, juicy citrus notes and a pronounced iodine-salinity. A wine of great complexity and crisp structure.
Finish
Long, salty-mineral and characterised by persistent freshness that elegantly balances the oxidative character.
Terroir & Origin
From the Jura, that unique region in eastern France renowned worldwide for its oxidative wine styles. The vineyard began conversion to organic viticulture in 2018, successfully completed in 2021.
Grape Variety & Vinification
100% Savagnin, hand-harvested and spontaneously fermented in oak barrels and temperature-controlled stainless steel fermenters. Ageing took place in used oak in the Vin Jaune cellar. Crucial: the barrels were not topped up, allowing a flor layer to develop – that yeast veil which gives the wine its characteristic oxidative style.
Food Pairing Suggestions
Classically with Comté or other aged hard cheeses. Excellent with morels in cream sauce, Coq au Vin Jaune, roasted calf sweetbreads, scallops or smoked fish. Also a fascinating pairing with Asian curries made with coconut milk.
Special Features
An authentic Vin de Voile – the little brother of the legendary Vin Jaune, yet already approachable after shorter maturation. At 15% alcohol powerful, but never heavy. A wine for connoisseurs that captures the essence of the Jura.
