Wine Description for Côtes du Jura Savagnin Vin de Voile 2018 from Domaine Grand

Colour & Appearance
Luminous golden yellow with amber-tinted reflections – the colour already reveals the oxidative maturation under the flor yeast.
Nose
Unmistakably Jura: The bouquet is complex and demanding in equal measure. Lemon zest and ginger meet green walnuts and green apples. These are joined by mineral hints of peat, the salty sharpness of preserved lemons and notes of aged Comté. An aromatic profile that polarises and fascinates.
Palate
Here the true greatness of this Vin de Voile reveals itself: electrifying freshness meets impressive substance. The wine possesses a deep, vibrant energy, is powerful and full-bodied without feeling heavy. The texture is lightly silky and dense, the structure crisp and precise. Nutty and earthy elements merge with juicy citric and herbal notes. Iodine and salt run through the entire palate, lending the wine maritime depth. At 15% alcohol it remains remarkably elegant and balanced.
Finish
Long, mineral and salty with lingering nutty echoes and a fine bitterness that invites the next sip.
Terroir & Origin
From the Jura, one of France’s most distinctive wine regions. Domaine Grand’s vineyards began their conversion to organic viticulture in 2018, which was completed in 2021.
Grape Variety & Vinification
100% Savagnin, hand-harvested and spontaneously fermented in oak barrels and stainless steel tanks. Maturation took place in used barrels in the same cellar as the legendary Vin Jaune. The barrels were deliberately left unfilled, allowing a flor layer to form – that yeast layer which gives the wine its characteristic oxidative character.

A wine for discerning pairings: Comté or other aged hard cheeses, morels in cream sauce, Coq au Vin Jaune, pan-seared scallops, oysters or monkfish with saffron sauce.
