- Grape Variety & Vinification
- 100% Savagnin, hand-harvested and spontaneously fermented in oak barrels and temperature-controlled stainless steel fermenters. Ageing took place in used oak in the Vin Jaune cellar. Crucial: the barrels were not topped up, allowing a flor layer to develop – that yeast veil which gives the wine its characteristic oxidative style.

- Classically with Comté or other aged hard cheeses. Excellent with morels in cream sauce, Coq au Vin Jaune, roasted calf sweetbreads, scallops or smoked fish. Also a fascinating pairing with Asian curries made with coconut milk.
