Wine information

Missùs, a carefully selected blend of nine distinctive acidifying apple varieties, comes largely from the plantation-rich landscapes of La-Folletière and in particular Friardel in the remarkable Calvados region. The historic part of Friardel that is home to these special varieties is the oldest and has had to endure a number of new plantings over the years, especially after violent storms like the one in 1999. When his grandfather took over the property in the 1960s, many of these majestic trees had already reached the ripe age of around five decades. Today, they impressively surpass the centenary mark and stand in a light population of about 100 to 150 trees per hectare. They include varieties such as Rambeau, René Martin, Locard Vert and there is even a lone, already ancient tree of the Grisse de Lisieux variety. Missùs is a cider created through the traditional method, where the fruit is hand-harvested, sorted and spontaneously fermented. It was bottled in March 2019, with disgorgement in December 2021.

This intense golden yellow cider tends towards amber and has a lively mousseux.

Aroma
For Benoit Lesuffleur, Missùs 2018 symbolises the crowning of his mastery and definitely represents a Grand Cru of Calvados. The exclusively acidic apples lend an invigorating note to the fragrance, which smells of both apples and apple quince and, on the other hand, exudes woodruff, lemons, fir honey, minerals, hops and a hint of Geuze.

Taste
On the palate, the Missùs unfolds a wealth of aromas and a stimulating play of acidity. It impresses with a balanced phenolic structure, subtle tannin and an elegant mousseux. This deep, tangy, persistent and lingering cider, in addition to all the freshness of ripe fruit and fallen fruit, also recalls yeast, various citrus variants and, once again, the characteristic hop flavour. A truly great cider.

Food recommendations
Scallops accompanied by a cider, apple and young leek combination. White halibut fillet garnished with a spicy cider and shallot sauce. Crispy pork belly topped with a tasty cider and apple sauce.
