Colour & Appearance
Transparent garnet red – a wine that reveals its lightness already in the glass. The pale colouration is not a deficiency, but an expression of a philosophy: early harvest, no enrichment, pure expression.
Nose
Here the characteristic Bertram-Baltes reduction reveals itself in all its complexity. Dark fruit – blackcurrant, dark raspberry, cherry and sloe – is enveloped by floral notes of roses and violets. Beneath lies a fascinating mineral layer: stone, lichen, a hint of tar, along with liquorice, pepper and sea buckthorn. With air, earthy nuances develop of forest floor, leaf litter and warm peat – multifaceted and dark.
Palate
At just 11.5% alcohol, this Pinot Noir unfolds remarkable radiance. The combination of early, yet physiologically ripe harvest and the absence of chaptalization yields crisp fruit with vibrant acidity. The wine is delicate, finely spiced and juicy – a paradox that works: simultaneously light and buoyant, yet powerful and substantial. The tannin presents itself supple and fine-grained, the texture is of striking precision and clarity. Absolutely pure.
Finish
Persistent and elegant, with fine spice and mineral aftertaste. The acidity carries the fruit long and precisely through.
Terroir & Origin
The Dernauer Pfarrwingert lies at 130 to 200 metres altitude in ideal south-facing exposure. The greywacke and slate weathering soils with slate shale components shape the mineral character. The vineyards are managed according to organic and biodynamic principles as well as permaculture methods.
Grape Variety & Vinification
Pinot Noir, spontaneously fermented in open stainless steel fermenters, matured over two winters in used large and half-large oak barrels. Deliberately reductive maturation, no chaptalization, minimal sulphiting before bottling. Purism in perfection.
Food Pairing Recommendations
Roasted duck, rare roasted venison, Coq au Vin, mushroom risotto with truffle, aged Comté or Époisses.
