This noble white Ventoux is composed of Grenache blanc, Clairette and Bourboulenc, in the style of a classic white Châteauneuf-du-Pape. The grapes come from the steep slopes of Mont Ventoux, hand-picked and limited to a low 15 hl/ha to ensure quality. An explosion of fruit is experienced in the wine's youth, while later the spice unfolds. Its creator, Philippe Gimel, is convinced that this drop can easily reach an age of 20 years.

With its expressive golden yellow colour, the 2020 La Montagne is a sight to behold. But before you can really enjoy it, it is advisable to decant it first. This process unleashes its complex bouquet, marked by buttery biscuit scents harmonised with a palette of fresh and dried fruits. Juicy oranges, candied orange peel, candied ginger, ripe apricots, pears and yellow plums play the leading role in this fragrance composition, supported by floral notes of acacia blossom and subtle nuances of liquorice, aniseed and an apparent shot of plum liqueur.

On the palate, the 2020 La Montagne presents itself juicy, well-rounded and silky, with a fruity-spicy mix reminiscent of white and yellow fruits as well as dried fruits. The balance between ripe, slightly grippy acids, a touch of tannins and its powerful body is remarkable. The aromas of aniseed and liquorice add to the complexity. All in all, it is an excellent and hearty companion for intense dishes.

Forget the traditional pairing of wine and food - here are some unexpected yet subtle pairings: Instead of grilled monkfish, consider smoked salmon with a side of herbed couscous. Instead of sweetbreads, wild mushroom risotto with ricotta or duck breast on a berry sauce are delicious alternatives. If you are a fan of bouillabaisse, why not try the Breton version with mussels and scallops?
