In the glass

  1. Colour

Luminous straw yellow with clear, brilliant, green reflections.

  2. Nose

Subtle nuances of grapefruit, vineyard peach and Nashi pear, underpinned by an ethereal herb garden of mint, lemon balm and fennel seed, as well as a delicate veil of yeast.

  3. Palate

Taut, energetic and focused on the palate; a crystal-clear, invigorating acidity meets fine phenolic grip and a creamy, long-lasting yeast melt.

  4. Character

A contemplative, self-contained wine full of inner tension, which, with its salty structure and noble restraint, acts like a Zen moment in the glass.

  5. Pairing

Excellent with poached turbot with herb butter, creamy veal fricassee or delicate dishes with fennel vegetables.

  6. Notes

A biodynamically produced Demeter wine that was allowed to mature on the fine lees in Styrian oak casks for a full three years after fermentation, thereby achieving its extraordinary balance and radiance.

Tasting note

Colour & Appearance
A luminous straw yellow, laced with clear, brilliant and greenish reflections.
Nose
A distinctly quiet, almost meditative opening. The aroma reveals itself only gradually in delicate layers. First, cool, tart citrus notes such as grapefruit, pomelo and mandarin unfold, followed by the fine fruit of vineyard peach, crisp nashi pear and a touch of cantaloupe melon. Behind this lies a dew-fresh herb garden with lemongrass, mint, chervil and lemon thyme, rounded off by nuances of fennel seed and aniseed. A whisper-thin veil of yeast provides calmness and structure.
Palate
On the palate, this wine shows remarkable energy and an almost electrifying tension. The acidity is crystal clear, taut and perfectly integrated, without any harshness. A dense, fine phenolics gives the wine grip and rhythm. Alongside a subtle fruit of bergamot and lime zest, the long lees ageing brings a quiet, creamy melt that elegantly coats the palate. With aeration, nutty notes of fresh bread crust and ethereal herbs like lemon verbena emerge.
Finish
An enormously long-lasting, salty finish. The wine does not linger through loud fruit, but vibrates for minutes on end through its fine texture and its stimulating, tart structure.
Terroir & Origin
The grapes for this special bottling come from the extremely poor, calcareous soils of Southern Styria. The Tement estate, fully biodynamically certified according to Demeter guidelines since 2022 (and also a member of respekt-BIODYN), uses this lime-rich terroir for wines of uncompromising regional authenticity.
Grape Variety & Vinification
This single-varietal Weißburgunder (Pinot Blanc) was fermented in large wooden casks made of Styrian oak, where it also underwent malolactic fermentation. It owes its name-giving “Zeitspiel” (time play) to a three-year maturation period on the fine lees – first in wood, later in stainless steel tanks.
Food Pairings
A magnificent partner for pan-fried sweetbreads, noble turbot with beurre blanc or a creamy risotto with fresh herbs and shaved Parmesan.
Special Features
What makes this wine special is the masterful play with time. Due to the three-year late bottling from the lees, the wine is completely at peace with itself, yet at the same time possesses a vibrating, almost transcendent Living Wines character that is reminiscent of great white Burgundies.
