Wine Description for Fontanasanta Manzoni Bianco Vigneti delle Dolomiti IGT 2024 by Foradori

Colour & Appearance
Slightly hazy, this natural white wine presents itself in an intense, luminous golden yellow – a visual testament to artisanal vinification without aggressive filtration.
Nose
Complex, multi-layered bouquet that opens with profound minerality and spicy notes. The vibrant freshness is carried by citrus fruits, Granny Smith apple and ginger. Particularly characteristic: the herbal-aromatic tones of sage, fennel and distinctive anise, which lend the wine an almost Mediterranean herbal spiciness.
Palate
The attack is positively explosively fresh – a texture that immediately demands attention. Apple and lemon dominate initially, before succulent pineapple notes join in. The saline minerality and precise acidity work intensely mouth-watering and create remarkable tension. A fine tannin structure – unusual for a white wine – lends additional structure and grip.
Finish
Long-lasting with persistent anise notes and subtle tannin structure. The saline minerality lingers elegantly on the palate and leaves a sustained, refreshing impression.
Terroir & Origin
Hailing from the Vigneti delle Dolomiti in Trentino, this wine benefits from the unique alpine character of Foradori’s terroir – cool nights, warm days and calcareous soils that define the distinctive minerality.
Grape Variety & Vinification
Manzoni Bianco, a cross between Riesling and Pinot Blanc, is vinified here in biodynamic fashion. The slight haziness and fine tannin structure point to skin contact and minimal intervention – typical of Foradori’s natural approach.
Food Pairing Recommendations
Predestined for Mediterranean cuisine: grilled sea bass, fennel risotto, ceviche, goat’s cheese with herbs or Vitello Tonnato. The herbal spiciness harmonises perfectly with Pasta alle Vongole.
Special Features
A wine with excellent ageing potential that impressively embodies the biodynamic philosophy of the renowned Foradori winery. Moderate alcohol content of 12.5% vol. underscores the elegance and drinkability.
