With just 12% alcohol, this sparkling wine displays remarkable lightness and drinkability without sacrificing complexity.
Terroir & Origin
The Palatinate, particularly the Southern Wine Route, offers ideal conditions for high-quality base wines. The mild, almost Mediterranean climate and chalky soils around Siebeldingen lend Rebholz sparkling wines their characteristic minerality and finesse. The Rebholz family manages their vineyards according to biodynamic principles and places great emphasis on low yields and selective hand-harvesting – prerequisites for sparkling wines of this calibre.
Grape Variety & Vinification
Pinot Noir is regarded as the most demanding grape variety for high-quality sparkling wines. The Extra Brut dosage with minimal added sugar allows the authentic fruit and structure of the grape variety to shine through unadulterated. Traditional bottle fermentation using the classic method and sufficient ageing on the lees impart depth, creamy texture and that fine perlage which distinguishes great sparkling wines. The Roman numeral „XI“ alludes to the continuous evolution of this cuvée line.
Food Pairing Recommendations
A versatile companion that works excellently as an aperitif, yet also pairs beautifully with sophisticated dishes. Classically with raw fish, oysters or seafood.
