Wine profile
Let's turn our attention to the Vießlinger Stern, the pride of Martin Muthenthaler. Favoured as a place for his lush Grüner Veltliner and also his Riesling, the Stern is paradoxically not to be found at all on the comprehensive vineyard lists. Nowadays, it is considered a sub-category of the Bruck vineyard. This site, small and difficult to reach with over 60 plots, is home to Muthenthaler's oldest vines, which are 35 years old. Interestingly, the plot is characterised by orthogneiss and mica schist, which gives the Riesling its special character. The wine was raised by spontaneous fermentation in acacia barrels and then refined on full lees with regular batonnage.
Colour scheme
A light golden yellow dominates the glass.
Scent
The Riesling Vießlinger Stern immediately captivates with its lush, clearly defined and almost hedonistic fruitiness that permeates the bouquet. Apricot, vineyard peach and yellow pears join yellow plums and kumquats. Also interesting is the subtle smoky note and the fine mineral note that gradually flows into the fruit and blends with an elegant yeasty note.
Flavours
Full-bodied and at the same time finely nuanced, this highly aromatic, lively Riesling has a firm core. On the finish, it becomes increasingly robust, dense and stony, while its minerality slowly electrifies the palate and tongue. The Vießlinger Stern is an experience - a delightful symphony at the beginning that expands into a serious composition. In a Burgundy glass, with enough air and time, this wine unfolds its multi-layered splendour.
Food pairings
Try grilled fennel wrapped in aniseed pastry, chicken skewers with lime-coriander salsa, or a carp on a fresh herb topping with purple potatoes and lemon thyme butter.
